6 medium size tart cooking apples
1/3 cup firmly packed light brown sugar
1/3 cup granulated sugar
1 tbsp cornstarch
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground mace
1 package pie crust mix or Pillsbury ready made pie crust

1. Wash, pare, quarter, core and slice apples thinly (7 to 8 cups). Place in large bowl. Mix brown and granulated sugars, cornstarch, cinnamon, nutmeg, and mace. Sprinkle over apples; toss gently to mix. Let stand about 10 minutes.

2. Prepare pie crust mix as directed on box or use the ready made pie crust. Put crust in pie pan.

3. Pile any apples and juice accumulated into pastry lined pie pan. Arrange top pie crust on top over apples put slits on top of the crust so steam can escape; turn edge under; pinch to make a stand-up edge.

4. Bake in hot oven 425º for 40 minutes or until juices bubble through slits. Cool on wire rack. Serve warm with
vanilla ice cream.
