Ingredients:  
2 large diced potatoes
1 can of sweet corn kernels
3 slices of diced bacon
1 diced onion
1 diced leek
1 cup milk
1 cup chicken stock
chopped parsley
salt and pepper to taste

Directions:
Directions:
Fry the bacon, add the onion, leek, potatoes, sweet corn, milk, stock and season with salt and pepper

Cook until the potatoes are soft.

Ladle out a mug of the soup and blend. Then return blended soup to main pan.

*Diced chicken can be added at this stage to make a main meal soup.

Serve hot with a pinch of parsley


**A little extra milk or water can be added if the soup is too thick
