2/3 cup green beans, cut into ½” pieces
1 cup cooked garbanzo beans
1 ½ cups cooked kidney or pinto beans
¼ cup sliced red onion
¼ cup apple cider vinegar
2 tablespoons honey
¼ cup water
2 tablespoons frozen apple juice concentrate

Directions:

1. Steam green beans for 5 minutes, until barely tender.
2. Combine all beans and onions in a bowl.
3. Prepare dressing by beating vinegar, honey, water and apple juice concentrate together with a fork until well blended.
4. Pour dressing over beans and mix well. Cover and let marinade set at room temperature for at least 30 minutes.
5. Chill for minimum of 30 minutes. Toss again before serving. Use slotted spoon to serve.
