Dried sage
8 large, thin slices of prosciutto
4 chicken breasts, cut in half lengthwise
2 tbsp. flour
Salt
1 tsp. ground black pepper
1 tbsp. olive oil
3 tbsp. butter
1 cup Marsala wine
2 tbsp. chopped fresh parsley (optional)

Directions:
Directions:
Preheat oven to 350º. Sprinkle dried sage leaves on top of a slice of prosciutto, then wrap the prosciutto around a chicken breast half. Continue with all 8 pieces. Place flour on a plate and season with salt and pepper. Dredge prepared chicken in the flour.

Heat oil and 1 tbsp. of butter in a large skillet. Once butter is foaming, add 4 of the cutlets seam-side down. Cook over medium-high heat until golden brown, about 3 minutes per side. Transfer to a baking dish. Add another tbsp. of butter to the skillet and brown remaining cutlets. Transfer to baking dish and cook in oven for another 8-10 minutes.

Reduce pan heat to medium-low and add the Marsala wine. Stir constantly scraping up the browned bits. Simmer 3 min. Stir in 1 tbsp. of butter and parsley. Spoon sauce over chicken and serve.
