12 Red bell peppers, roasted, peeled and seeded. (Blacken and blister skim in 500 degree oven for approximately 20 minutes).
1 red onion, slice thin (large 6-7 oz.)
4 cloves garlic, crushed
1 cup olive oil
1 tablespoon salt (or to taste)
1 tablespoon pepper (or to taste)

Sauté the red onion and garlic with ˝ cup olive oil (heat pan 1st, then add oil, don’t brow onions or garlic). Puree rest of the ingredients, pouring remaining oil in slowly. If sauce is bitter, add a pinch or so of sugar to smooth out flavor.
