6 lbs. of firm, ripe peaches
Ice water mixed with 3-4 tablespoons lemon juice
2 cups white vinegar
1 cup cider vinegar
3 cups of water
4 ½ cups sugar
Cinnamon sticks
Whole cloves

Directions:
Directions:
Blanch peaches in boiling water, plunge into ice water to cool, and slip off the skins.
Slice peaches into large pieces and drop into lemon treated water.

Place sugar, cinnamon sticks, and vinegars into large, heavy kettle, and bring to a boil.

Add peaches and simmer for 5 minutes.

Fill prepared pint mason jars with peaches, placing 1-2 cinnamon sticks and 4-5 whole cloves into each jar. Pour enough syrup into each jar to cover peaches.

Process in water bath for 15 minutes
