Ingredients:  
1 package couscous
2 ˝ cup chicken broth
2 tablespoons butter
1 cup celery, chopped
˝ cup green onions, chopped
1 green pepper chopped small
1 red pepper chopped small
1 yellow pepper (optional) chopped small
1 cucumber (remove skin and seeds)
1-2 tomatoes (chopped, remove seeds)
3” cube feta cheese, crumbled
1 can black olives, sliced

Directions:
Directions:
Bring soup to boil, stir in couscous. Cover and remove from heat immediately. Let sit per package directions. Meanwhile sauté celery and onions in butter until tender. Add to couscous (if you like, sauté peppers or add in raw). Add in remaining ingredients. Season to taste.

Can be heated in microwave or served cold.
