8 T. olive oil (1/4 cup)
2 cups finely chopped onions

8 cups tomatoes (2 large cans each of crushed and whole) Dei Fratellei or Muir Glen
2 cans tomato paste
4 tsp. dried basil (crush in palms over sauce to release flavor)
4 tsp. sugar
2 tsp. salt
Fresh ground pepper to taste
Red wine (1 tomato paste can)

Directions:
Sauté onions in oil until translucent. Do not let them brown. Add everything else. Bring to a boil, and then simmer 1-2 hours.

We usually buy either Italian sausage or bone-in chicken. Brown/cook meat then add to sauce when adding other ingredients above. Chicken gives it a sweeter taste than the sausage.
