Make a sauce of:
2 quarts tomatoes
2 cans tomato paste
¾ cup wine
Salt
Pepper
¾ teaspoon ground allspice
4 bay leaves
¾ teaspoon thyme
Dash hot pepper seeds
1 teaspoon basil
1 teaspoon rosemary

Directions:
Directions:
Brown chicken in oil and put aside (can also be broiled)

Saute in oil:
1 cup chopped onion
1 cup chopped pepper
3 stalks celery, minced
4 cloves garlic, minced
2 cups mushrooms

Combine with tomato sauce and simmer 2 hours.

Serve over hot pasta.
