2 cups of sifted enriched flour
1 tsp baking soda
1 tsp salt
1/2 cup shortening
1 cup sugar
2 eggs
1 cup mashed ripe banana (2 to 3 bananas)
1 T vinegar plus milk to make 1/2 cup liquid

Directions:
Directions:
Sift together flour, soda, and salt. Cream shortening, blend in sugar, add eggs one at a time, and beat until fluffy. Add flour mixture alternately with bananas and liquid, beating well after each addition.

Pour into greased 9 1/2 X 5 1/2 X 2 3/4 inch loaf pan (regular loaf pan)

Bake at 350º for 60 to 70 minutes or until done.

Remove pan, cool several hours, or overnight before slicing
