1 box Jiffy Corn Muffin Mix
4 eggs
2 cups grated cheese
1 10 oz chopped broccoli
1 med onion
1 stick butter

Directions:
Directions:
Preheat oven to 375º
Thaw broccoli, drain off water
Mix up muffin mix, eggs, cheese, then broccoli, lastly chopped onion

Bake for approximately 30 min or until golden brown. ***If you make this with a small cast iron skillet then split into two batches or it will not cook thoroughly.

If made in large skillet then place all mixture into skillet

This recipe was given to me by Grandma Sapp, but Grandmother Thompson gave it to her.

If you like cornbread this is so yummy!

You can also take out the broccoli and add green chilies instead
