6lbs meaty beef short ribs
Coarse kosher salt
1/4 cup all purpose flour
1/2 cup olive oil, divided
3 cups chopped onions
2 cups chopped peeled carrots
2 cups chopped celery
8 garlic cloves, peeled
1/4lb sun-dried tomatoes (not packed in oil)
1/4 cup fresh thyme sprigs
5 large fresh sage sprigs
5 bay leaves
2 cups dry red wine
4 cups low-salt chicken broth

Preheat oven to 350F or set crockpot to high. Sprinkle ribs with coarse salt & pepper. Sprinkle with flour and toss to coat. Heat 1/4 cup of oil in large heavy wide pot over medium-high heat. Working in batches, cook ribs until brown all over.
Wipe out pot, add 1/4 cup oil and add onions, carrots, celery & garlic - cook until tender about 12 minutes. Add sun-dried tomatoes, sprigs of thyme, sage and bay leaves. Add ribs to pot in a single layer and then wine and reduce for 5 minutes. Finally add broth. and bring to a simmer.
Either cook in oven for 2 hours or crockpot for 3 - 4 hours, until ribs are tender. Carefully transfer ribs to a large bowl, keeping meat attached to bones if possible. Remove herb sprigs. Pass all braising liquid and vegetables through a food mill, return to pot and skim fat from surface. Season gravy and return ribs to simmer and rewarm.
