My Mother's Jelly Rolls Recipe

3 eggs
4 or 5 Tbs. water
1 cup sugar
1 1/2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
Powdered sugar
Jelly or apple butter

Directions:
Directions:
Beat eggs. Add water and beat again. Add sugar and beat. Then add flour, baking powder, salt and vanilla and beat. You will need 2 - 9x13 pans. Put waxed paper in bottom of pan and spray with non-stick spray. Spread one-half of dough in each pan. It will be thin and barely cover the bottom. Bake at 350º until barely done - don't wait until it turns brown. Turn out on clean cloth sprinkled with powdered sugar. Remove wax paper and quickly roll up towel and bread while still hot. Let cool then unroll and quickly spread with jelly. Roll up again and wrap in waxed paper.
