½ cup margarine
1 cup brown sugar
1 egg
¾ cup drained crushed pineapple
1 teaspoon vanilla extract
½ cup chopped nuts
¼ teaspoon salt
¼ teaspoon baking soda
1 teaspoon baking powder
2 cups flour

2 large bags of marshmallows – cut in half
1 bag coconut
Maraschino cherries or candied cherries cut into 4ths.

Directions:

Cream margarine and brown sugar. Add egg, pineapple, vanilla and nuts. Add baking powder, baking soda, salt and flour.

Drop ½ teaspoon on greased cookie sheet.
Bake 350 degrees for 10 minutes.
Place cut side of marshmallow on hot cookie. Return to the oven for 2 minutes. Let cool.

Ice top and sides, dip in coconut and top with cherry.

Icing:
1 cup milk and 4 heaping tablespoons of flour. Cook until thick on low heat. Let cool completely.
Add 1 cup Crisco, 1 cup sugar and 1 teaspoon vanilla.
Beat until smooth.
