2 cups sugar
3 eggs
1 cup oil

Beat eggs well. Add sugar and oil and beat well.

Then add:

2 cups grated and peeled zucchini
2 cups flour
1 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
3 teaspoons cinnamon
1 teaspoon vanilla

1 cup nuts, dates or raisins (optional)

Directions:

Grease and flour pans well.

Bake in 2 loaves at 350 degrees for one hour.
