Pignoli Cookies Recipe

1 pound almond paste
1 3/4 cup granulated sugar
4 egg whites slightly beaten (x-large room temp.)
1/4 - 1/3 pound pine nuts (pignolis)
parchment paper (for baking)
one egg yolk
1/2 cup water

Directions:
Directions:
Pre-heat oven to 350º F
in large bowl mix almond paste for about 3-5 minutes
add sugar and slightly beaten egg whites & mix on a medium speed for about 5-7 minutes (or until creamy)
in separate small bowl mix egg yolk and water for the egg wash.
line the baking sheets with parchment paper
drop rounded teaspoon fulls of dough about 2 inches apart. press in pignolis on top of cookie.
brush a small glaze of the egg wash onto the top of cookies.
bake for about 15-18 minutes or until pale brown (rotate pans after 5 minutes in oven)
cool on wire rack
sprinkle with confectioner's sugar if desired

This recipe I started using after Greg and I moved to Florida and it was our first Christmas time as residents and I was unable to find a good pignoli cookie. So I looked in my old box and found this. It has since become a part of my Christmas Cookie Baking must make.
