Ingredients:  
1 chicken (purchase whole) cut into 10-12 pieces (cut each breast into three pieces)
4 bay leaves
1/8 cup chopped parsley
5 cloves garlic roughly chopped
1 large onion chopped fine
1/8 cup balsamic vinegar
1 cup red wine
salt & pepper to taste
1/2 to 3/4 cup olive oil
2 cups chicken stock

Directions:
Directions:
Bake chicken in over at 375º for 40-50 minutes or until done (chicken can be fried)
In large covered pot add oil,onion, garlic and bay leaves.
Cook until onions are translucent
Add chicken and mix to incorporate everything
Cover and cook 5 minutes
Add balsamic vinegar and mix
Cover and cook 5-10 minutes
Add wine and mix
Cook covered for 10 minutes
Add chicken stock and parsley
Cook for 10 minutes
Serve with rice or noodles

Side note, do not break up chicken when mixing. Gently move around (or shake lightly when lid is closed tight when adding each ingredient)
