whole pork leg (thigh) about 10 lbs
head of garlic
5-6 leaves oregano brujo
5-6 leaves culantro
1 medium Spanish onion
1 green bell pepper
3 tbl black pepper
1 tbl salt

Directions:
Directions:
Chop and grind all herbs and spices together
poke holes into pork leg
Place pork in large pan and rub all ingredients onto pork
Let rest over night in fridge

The next day:
Pre-heat oven to 375 degrees F
In the large pan that pork is in pour 2-3 cups water
Cover with aluminum foil and roast for 2 hours
Then uncover and check temperature of inside pork (165 degrees or higher)
When that temperature is reached uncover and cook for 15 more minutes for a golden crust
