At least 1.25 lbs Sharp cheddar cheese
At least 1/2 lb Pepperjack cheese
4x8 aluminum loaf pan

Cheese should be cut into slices about a sixteenth of an inch thick.

The sharp cheddar cheese needs to be on the bottom-about 3 layers deep. Then put 2 layers of pepperjack cheese, then 3 more layers of sharp cheddar, then 2 more of pepperjack. Finish up with 3 layers of sharp cheddar on the top. If this doesn't fill the loaf pan up, add more sharp cheddar.

Cheese can be layered however you want. If you want more heat, add more layers of pepperjack between the layers of sharp cheddar.

Smoker should be set to 300º or so. Cook cheese until it bubbles.

Wait until cheese is completely cooled before cutting it out of the aluminum loaf pan or it will stick.
