1 c. chopped broccoli
1/2 c. chopped carrots
1/2 c. chopped onion
1/2 c. chopped red bell pepper
1 garlic clove, pressed/minced
1 can (14-14 1/2 oz) chicken broth
2 c. diced cooked chicken
1 T fresh basil, chopped
1 jar (16oz) Alfredo sauce
grated fresh Parmesan cheese (optional)

Directions:
Directions:
1. Place chopped veggies and minced garlic in a soup pot. Add broth; bring to a boil. Cover; reduce heat and simmer 5 minutes or until vegetables are crisp-tender.
2. Meanwhile, dice chicken and chop basil. Add chicken and Alfredo sauce to broth; simmer 5 minutes until heated through. Remove from heat; stir basil into soup.
3. Sprinkle with Parmesan cheese if desired.

A fresh-from-the-oven loaf of Italian bread or garlic bread goes great with this soup. I like to use a rotisserie chicken from the deli of my grocery store to save time.
