4 boneless, skinless chicken breasts, cooked & diced
½ c minced green onion
½ c minced red bell pepper
1⅓ c frozen corn kernels
1 c black beans, rinsed & drained
½ c frozen, chopped spinach, thawed & drained
2 Tbsp minced cilantro
1½ tsp. cumin
2 tsp. chili powder
1½ tsp. salt
3 c shredded jack cheese
20 (8") flour tortillas

Directions:
Directions:
1. Preheat oven to 425°F.
2. Heat 1 Tbsp oil in a pan & stir in green onion & red pepper. Cook until tender.
3. Mix in chicken, corn, black beans, spinach, cilantro, cumin, chili powder, & salt. Cook until well blended & hot.
4. Microwave tortillas (wrapped in a moist cloth) 1 minute to soften.
5. Spoon even amounts of mixture toward the bottom half of each tortilla. Bring bottom of tortilla over the filling, fold in the sides, then finish rolling up (egg roll style).
6. Spray a cookie sheet or jelly roll pan with cooking spray & arrange rolls with seam side down. Spray the tops of the rolls with cooking spray or butter spray.
7. Bake @ 425°F about 15 minutes. Freezes and reheats well in the oven or microwave
