4 Chickens, 2 1/2 lbs each or equivalent amount of boneless chicken breasts (10 lbs) 1 head garlic, peeled and finely pureed (If it's a large head, I use half, depends on how much garlic you like) 1/4 cup dried oregano coarse salt and fresh ground pepper (to taste) 1/2 cup red wine vinegar 1/2 cup olive oil 1 cup pitted prunes (I quarter them) 1/2 cup pitted Spanish green olives 1/2 cup capers with a bit of juice 6 bay leaves

Directions:1) In a large bowl combine all the above ingredients. Cover and let marinate overnight, refrigerated. (I transfer the ingredients into two gallon baggies and turn them occasionally while they marinate.) 2) Pre-heat oven to 350 3) Arrange chicken in a single layer in large shallow baking pan (or two) Spoon marinade evenly over the chicken. 4) Sprinkle over chicken 1 cup brown sugar (I use less) 5) Pour around chicken 1 cup white wine (cheap) 6) Bake 50-60 minutes (less if using boneless), basting frequently with pan juices 7) Transfer chicken, prunes, olives, capers to a serving platter and spoon pan juices over the top 8) Sprinkle generously with chopped cilantro or parsley
