6 eggs
4 1/2 cups sugar
1 1/2 cups salad oil (I use canola)
1 large can (29 oz.) pumpkin
5 1/4 cups all-purpose flour
1 1/2 tsp salt
1 Tb EACH baking soda, ground allspice, and ground cinnamon
1 package mini chocolate chips
1 1/2 cups walnuts (optional)

In a 5-6 quart bowl, slightly beat eggs. Add sugar, oil, and pumpkin and mix thoroughly; set aside. In a separate bowl, combine the flour, salt, soda, allspice, and cinnamon. Add to pumpkin mixture and stir until just blended; stir in walnuts if used.
Recipe makes 12 cups batter, enough for 4 loaves or 12 mini-loaves or 4 later cakes or 4 dozen muffin or cupcakes.

For pumpkin bread loaves, spoon 3 cups pumpkin batter into a greased 4X8 inch loaf pan. Or for a mini loaf, spoon one cup batter into a greased 3X6 loaf pan.

Bake in a 325º oven until a wooden toothpick comes out clean; allow about 1 hour and 15 minutes for large loaves, about 45 minutes for small loaves. Cool in pans for 10 minutes, then turn out to cool thoroughly. The loaves slice best after 3 to 4 hours.

For muffins/cupcakes, fill 2-1/2 inch muffin cups and bake at 350º until muffins spring back when lightly touched, about 20 minutes. Serve warm or cool.

For cake, spread 3 cups batter into a greased 8 inch square pan. Bake in a 350º oven until a wooden pick comes out clean, about 25-30 minutes. Cool in pan for 10 minutes,then turn out. Frost with your favorite cream cheese or butter-cream frosting.

This is the best recipe I have ever tried. The spices are just right and it's not too sweet. I make these for bake sales and gifts every year. Whatever pan you use, fill about 3/4 full with batter and go from there.
Check for done-ness regularly. Don't over-bake!
