Grandma Brenner's Chicken soup with dumplings Recipe

Ingredients: 3 lb chicken 2 carrots cut into 1/4 inch pieces 2 parsnips cut into 1/4 inch pieces 2 small potatoes cut into quarters 1 onion 2 celery stalks DUMPLINGS 1/2 cup Farina or cream of wheat 1 egg water until moist TOMATO SAUCE FOR CHICKEN 1 can tomato soup 1 can milk add flour until it makes thick sauce

Directions:Place chicken in large soup pot making sure you take giblets out of chicken. Fill pot with water until it covers chicken and add giblets. Boil chicken until done and falls off the bone. Take chicken out of pot and put vegetables into pot and boil until cooked. Take meat off of chicken and set aside. Drain vegetables out of the soup broth and set aside. Mix farina with egg and water until you can make into small dumplings. Take 1/2 teaspoon of dumpling mixture and drop into boiling broth. Cook dumplings until they come to top of pot. After dumplings are done add chicken and vegetables back into pot. Grandma Brenner would save the chicken from the soup and when she finish the soup she would cover the chicken with the tomato sauce. Mix tomato soup, milk and add enough flour until the sauce is thick and cook while stirring flour into soup mixture. |

Notes: This soup was everyone's favorite. We ate it every winter. It is good with or without the tomato sauce.
