4 t. olive oil, divided
2 lbs. lean ground beef or turkey
2 c. Spanish onion, chopped
4 celery stalks, chopped
2 garlic cloves, minced
1 jalapeno pepper, seeded & minced
4 T. chili powder
2 T. ground cumin
2 t. oregano
2 bay leaves
1/2 t. salt
1/2 t. crushed red pepper flakes
2 28oz. cans diced tomato
3 c. beef or chicken broth
2 8oz. cans of tomato sauce
4 19oz cans red kidney beans, rinsed & drained
grated cheddar cheese
sour cream
chopped green onions

Directions:
Directions:
Heat 2t. olive oil in a large stockpot over medium heat. Add meat and saute until browned and cooked through, breaking up meat as it cooks. Transfer to a colander to drain fat.
Heat remaining 2t. of oil in the same pot. Add onion,celery,garlic and jalapeno and saute 4 minutes. Return meat to pot. Add chili powder,cumin,oregano,bay leaves,salt and red pepper, stir to coat vegetables and meat with spices. Add tomatoes,broth,tomato sauce and beans and bring mixture to a boil. Reduce heat, partially cover and simmer 1 hour.
To serve, discard bay leaves, ladle chili into bowls and top with cheese, sour cream and chopped onions.
