12 new potatoes (about 2 lbs.) thoroughly scrubbed
salt & pepper to taste
1 1/2 cups mayonnaise
1 tbsp. Dijon style mustard
juice of 1 lime
1 medium tomato, chopped
1/2 medium red onion, chopped
2 scallions, chopped
2 tbsp. chopped fresh cilantro
1 small garlic clove, minced
1/2 tsp. cayenne pepper

In a large Dutch oven, bring to a boil enough salted water to cover the potatoes. Add the potatoes & cook for 20 to 30 minutes, or until the potatoes "give" slightly when stuck with the point of a sharp knife. Drain the potatoes & cut into 1/2 inch-thick chunks. Meanwhile, in a large bowl, stir together the remaining ingredients. Add the warm potato chunks & toss gently to coat. Cover & refrigerate to blend the flavors.
