1/2c Pistachios
1 clove garlic
1tsp lemon peel
1/4c bread crumbs
Salt
Pepper
4- 1 inch thick pork chops
1 egg beated
1/4c EVOO

Directions:
Directions:
Preheat oven to 400 deg
Finely grind nuts, garlic, peel and salt. Whisk with bread crumbs.
Season chops w/ S&P, dip in egg, dredge in nuts.
Heat oil in skillet and brown.
Bake in pan until 140deg (~20min)

You can use a pork tenderloin instead of single chops, just brown all around instead of two sides.
