4 sleeves saltine crackers
3 boiled eggs (chopped)
1-2 c. turkey (chopped)
1 stick margarine
2 c. turkey drippings or Chicken Broth
pepper (to taste)

Directions:
In a large mixing bowl, crush all 4 sleeves of saltine crackers. Boil 3 eggs for 10 minutes and chop finely; add to crushed crackers. After carving your turkey, pick the meat from the neck, wings, and any small pieces of meat that you do not want to serve as slices; cut up with a knife in small pieces and add to cracker mixture. Melt one stick of margarine in microwave for one minute and add to mixture. Pour 1 to 2 cups of turkey drippings or Chicken Broth in the mixture. (The amount used depends on the amount of meat put in the dressing. Add enough liquid to make the dressing very moist.) Spray a 9" x 13" casserole dish and press the mixture evenly in the dish. Cook 15 to 20 minutes in a 400º oven.

The original recipe used the heart, liver, and gizzard in the dressing, but my children preferred it with just turkey meat. The dressing is sometimes eaten better than the turkey itself!!!
