1 Tbsp. butter
1 Tbsp. olive oil
8-10 Shallots onions, thinly sliced
Kosher salt
1 Tbsp. Sugar
Dry white wine (optional)

Directions:
Heat butter and oil in a large skillet until butter is melted; add shallots and sprinkle with salt. Cook over the lowest possible heat for 1 hour, turning shallots several times. Do not increase heat - the shallots need to be thoroughly soft before they begin to brown. Once they are soft increase the heat to medium and add 1 Tbsp sugar stirring constantly, until well browned or caramelized, about 25 more minutes more. If the residue from the juices has built up in pan add wine or water. Scrape pan to dissolved the browned bits. They will immediately mix into the shallots, darkening them further. Remove from heat.
