1 12-inch Dutch oven
1 med Onion, chopped (optional)
1/2 lb Bacon or ham cut into small pieces
1 pk 32-oz. hash brown potatoes
12 Eggs
1 1/2 lb Cheddar cheese, grated

Mountain Man Breakfast Instructions:

1.Preheat Dutch oven over 10 charcoal briquets and preheat lid with 14 briquets.
2.Brown 1/2 pound bacon.
3. Add onion and cook until clear.
4. Remove bacon and onions from Dutch oven and drain on paper towels.
5. Wipe excess grease out of dutch oven and place back over hot briquettes.
6. Stir in the 32-ounce bag of hash brown potatoes.
Fry until potatoes are golden brown, then mix the bacon and onions back in.
7. Break 12 eggs into medium mixing bowl and beat thoroughly.
8. Pour over potatoes, bacon and onions.
9. Cover with hot lid and cook until eggs are almost solid.
10. Sprinkle with 1 1/2 pounds grated cheddar cheese.
Continue cooking until eggs set and cheese melts.
Serve with Salsa or chili sauce.

Alternate preparation:
Precook bacon and onions . Line the dutch oven with aluminum foil add thawed potatoes, bacon and onions. Continue with step 7.

I make this family favorite every camping trip. I use the alternate preparation with ham and no onions. Clean up is much easier when you line the dutch oven with aluminum foil.
