1/2 c butter
1 T finely chopped onions
1 - 4 oz can mushrooms (optional)
6 T flour
3 c chicken stock or consomme
2 c milk
2 T lemon juice
4 C chicken breast, cooked, cubed (1.5 lb)
Suggested Toppings:
grated cheese
coconut
Chinese noodles
pineapple tidbits
Craisins
raisins
frozen green peas
grated carrots
chopped celery
chopped hot peppers
chopped bell peppers
green onions
Mandarin oranges
chopped tomatoes
slivered almonds

Directions:
Directions:
Melt butter in a large sauce pan. Add onion and cook until translucent. Add flour. Stir to make a paste. Slowly whisk in milk stirring constantly. Add chicken stock. Cook until mixtures thickens and comes to a boil. Remove from heat.
Option: canned cream of chicken soup can be added to extend the sauce.
Serve over steamed rice with desired toppings.
