"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

1 lb. Pinto Beans
1 clove Garlic, Minced
Salt
Pepper

Optional:
Jalapeno or Serrano Chile
Piece of Ham
Slice of Bacon

Directions:
Directions:
Clean beans and remove any rocks or broken beans; rinse beans thoroughly and put in crockpot. Cover beans with cold water (can soak beans overnight). Add garlic and other optional ingredients. 1 large chile is just enough to add a nice flavor - put it in whole. Cook in crockpot on high for about 4 hours or until beans are soft and pink. Add salt and pepper to taste about 1 hour before beans are done. You can always add more salt later so it is best to go light on it at first.

If I have lard available, I sometimes add a spoonful to the beans instead of ham or bacon. Whole beans are wonderful served with corn bread or chile colorado.
