1 Can Red Chile Sauce
1 tbsp. Corn Starch
Shredded Longhorn and Jack Cheeses
Chopped Onion
Corn Tortillas
Oil (1/4 to 1/2 c.)

Directions:
Directions:
Heat red chile sauce in small skillet, lower heat to warm. Add cornstarch to thicken slightly. Heat oil in another skillet. Dip corn tortillas in oil just to soften; then dip in red chile. Lay tortilla in baking pan; add a line of cheese and a few onions (to taste) and roll up. Fill pan with enchiladas. Pour remaining red chile over enchiladas and sprinkle cheese over the top. Bake at 350º for 5-10 minutes until cheese is melted.
