• 1/2 cup cornmeal
• 1/2 cup semolina wheatlettes
• 4 cups of water
• 1T of butter
• 2 to 3 oz of Asiago cheese
• 1/2 tsp. Salt

• Put the water in a medium pot on the stove and bring to a boil under medium heat.

• Gradually stir in the cornmeal and semolina with a whisk.

• When the mixture starts to thicken, turn down the heat to low and continue to cook for 5 minutes. Add the butter at this time. Be careful as the mixture will start to pop and splatter. Its easy to get some on yourself if you are not careful.

• When the polenta is cooked, add the shredded cheese.

• The polenta is ready to eat now. However, for a nice presentation, I like to put it into separate small ceramic ramekins and top it with more shredded cheese. I put it under the broiler for a few minutes until the top is golden brown.

This is a simple yet delicious and elegant side dish. I especially like it with a hearty meat dish. I put a mound of polenta under a lamb shank or roast beef and it is a wonderful accompaniment. You can use pure cornmeal instead of the Semolina if you want. I like the mildness of the Semolina myself. Just be sure to use the coarse meal instead of the flour. As well, you can use different types of cheese. Parmesan works very well but one of my favorites is using blue cheese. Delicious
