3 tbsp. cornstarch
2 cups chicken broth
1 1/2 tbsp. lemon juice
1/2 tsp. each of salt and celery salt
2 cups coarsely diced chicken
1 can bing or white cherries, drained
1 can white grapes, drained, or use fresh grapes
1 can diced peaches, drained
1/2 cup slivered almonds
Hot rice
Chow mein noodles

Directions:
Directions:
Combine cornstarch and cold broth; cook until thick. Stir in lemon juice and seasonings. Add chicken, bring to a boil. Add fruit and nuts. Serve hot on bed of cooked rice; top with chow mein noodles.

Number of servings: 6-8

This recipe won me first place in a state fair chicken cooking contest. As a result, I attended the National Chicken convention in Syracuse, NY and prepared this same recipe. I think I was a sophomore or junior in high school so that would be around 1956...a long time ago.
