2/3 c. dark or golden raisins
2/3 c. sugar (half brown if desired)
1/3 c. soft shortening
1/2 tsp. cinnamon
2 eggs, beaten
1 c. canned applesauce
1/2 c. chopped nuts (pecans or walnuts)
2 c. sifted flour
3 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt

Directions:

Rinse and dry raisins; chop coarsely. Beat sugar, shortening, cinnamon and eggs together. Stir in applesauce, raisins and nuts. Sift flour, baking powder, baking soda and salt together into first mixture. Stir until blended. Turn into greased and floured bread loaf pan (8 1/2 x 4 1/2 x 2 1/2 ). Bake in moderate oven (350º) for about 1 hour. Cool thoroughly before storing or cutting.
