1 c finely chopped red apple
1 can (8 oz) unsweetened crushed pineapple, drained
1/4 c finely chopped pecans, toasted
1/4 c reduced-fat sour cream
1/8 tsp salt
3 medium cucumbers

Directions:
Directions:
In a small bowl, combine the apple, pineapple, pecans, sour cream and salt. Cover and refrigerate until chilled.

To score cucumbers, cut lengthwise strips through peel. Cut each cucumber into16 slices. Blot with paper. Spoon 1 tsp apple mixture on each slice. Yield 4 doz.

Make sure your cucumber slices are dry so the fruit mixture will stick to the tops.

The red apple adds the color, you might have to add a few pieces on top of the mixture.
