1 1/2 lb. shrimp, peeled and deveined
1 small white onion, chopped
6 tbs. butter
6 tbs. flour
2 tsp. salt
2 tsp. pepper
2 tsp. curry powder
1/2 tsp. ginger
4 cups low fat milk
White rice, cooked
Coconut
Peanuts

Directions:
Directions:
Cut the shrimp in half if they are too large.
Sauté the onion in butter until tender.
Blend in the flour and seasonings.
Add the milk gradually, then the shrimp.
Stir constantly until the shrimp are pink, and the sauce is the thickness you want.
Serve over rice with coconut and condiments.
