2 large eggs.
2 c sugar.
2 tsp cinnamon.
1/2 c oil.
1/2 c chopped walnuts.
2 c sifted all purpose flour.
1 tsp salt.
2 tsp baking soda.
1/2 c golden raisins.
3 cups diced apples.

Preheat oven to 350º. Grease the bottom of a 9x13 pan and dust with flour. In a large bowl, lightly whisk the eggs. Stir in the sugar, cinnamon, oil and walnuts. Sift together the flour, salt and baking soda and add to the mixture. Stir in the raisins. Stir in the diced apple. The batter will be thick. Spread the batter into the prepared pan. Bake until a toothpick inserted in the middle, comes out clean, about 45 minutes. Cool completely. Cut into squares. Cake will be moist. May be served with a scoop of ice cream and/or drizzled with caramel sauce.
