1 c. (8oz) sour cream
1 8oz can whole kernel corn
1 8oz can cream-style corn
1/2 c. shredded cheddar cheese
1/4 c. sliced green onion
1/4 c. butter, melted
1 egg, beaten
1 package (8 1/2 oz) cornbread mix
1/4 c. roasted, salted and shelled sunflower kernels

Directions:
Directions:
1. In a large bowl, mix together sour cream, whole kernel corn, cream-style corn, cheese, green onion, butter, and egg.
2. Stir in cornbread mix.
3. Spoon into greased mini muffin cups and sprinkle with sunflower kernels.
4. Bake at 375ºF for 30 to 35 minutes. Cool 2 minutes before removing from pan.
5. Serve warm.
