Pineapple filling
1 large can crushed pineapple
3/4 cup sugar
2 eggs
1 tsp vanilla
3 tbsp cornstarch
1 tbsp butter

Crust
3 cups flour
1/2 tsp sugar
1/2 tsp salt
2 1/2 tsp baking powder
1/2 tsp baking soda
3/4 cup shortening
2 eggs
1/4 cup milk
1 tsp vanilla

Directions:

Pineapple filling
Mix cookie ingredients together, cook until thick. stir carefully on low heat to avoid lumps. Set aside.

Crust
Mix flour, sugar, salt, baking power and baking soda together. Add shortening, eggs, milk and vanilla. Mix well.

Roll out half of the dough and place it on a greased cookie sheet. Cover it with pineapple filling. Take the rest of dough and cut into strips. Lay the strips across the filling so that you have an open work effect.

Bake at 350º for 20 minutes. Let cool and cut into squares.
