Brine:
1 Gallon Water
1 Cup Brown Sugar
1 Cup Salt
1 Lemon, quartered
1-2 large sprigs each of Rosemary, Sage, Thyme
1 Onion-quartered
A few garlic cloves

Rosemary Lemon Salt:
2 tbsp finely chopped Rosemary
1/2 cup Salt
1 Lemon, zested

Directions:

Wash turkey, put aside
Make Brine in large pot, make sure all ingredients are dissolved before putting turkey in it-I recommend a large brining bag if you don't have a pot big enough
Soak turkey in Brine-in fridge-for at least 24 hrs
Remove turkey from brine for at least an hr before cooking to let it get to room temp
Rub turkey with olive oil, then liberally pat Rosemary Salt all over turkey
Throw another chopped onion and some rosemary inside cavity of bird
Place bird upside down in oven for 1 hr at 450 degrees
After 1 hr, flip bird, stuff with stuffing if you choose, and lower temp to 350 degrees for remaining 2-2.5 hrs.
Make sure to baste with butter or broth every 30 mins
Let rest about 20 mins before carving!
