6 ½ cups flour
2 tsp salt
1½ cups milk (scalded)
2 Yeast Cakes - dissolved in ½ cup warm water
½ cup shortening
½ cup sugar
½ cup raisins (can use white raisins)
4 egg yolks slightly beaten
2 tsp orange rind (or 1 tsp orange rind and 1 tsp lemon rind)

Directions:
Directions:
Into a large bowl place the scalded milk and add shortening, salt, sugar, rind and raisins. Cool. Add egg yolks, yeast and flour. Knead well and place in a greased bowl. Let rise for 1½ hours, punch down and let rise another 1½ hours. Roll out and put in pan or let rise 1 more hour. Brush top with milk. Bake at 375º for 1 hour. While still hot brush top with icing.
