1/2 cup rice
4 cups milk
1/4 tsp salt
1/2 cup raisins
2 egg separated
1/2 cup sugar
1/4 tsp cinnamon
1 tsp vanilla

Directions:
Directions:
Add rice, 2 cups milk, 1/4 tsp salt to saucepan. Cook until tender ( about 45 minutes). Last half hour stir in 1/2 cup raisins. Next stir in 2 cups milk, 2 slightly beaten egg yolks, 1/2 cup sugar, 1/4 tsp cinnamon and 1 tsp vanilla. Cook for 5 minutes, stirring occasionally. Now carefully fold in 2 stiffly beaten egg whites.

Pour into casserole dish and bake at 350º for 30 minutes. Serve cold.
