2 lbs. hot, cooked potatoes
2 T. milk
3 T. butter or margarine
Salt and pepper to taste
1 cup freshly grated Parmesan cheese
1 T. minced green onion
2 eggs, beaten
3 - 4 cups crushed cornflakes

Directions:
Directions:
Preheat oven to 400º. Peel potatoes; mash with milk, butter, salt and pepper. Stir in cheese and onion; mix well. Shape into balls about 1 inch in diameter. Dip potato balls in eggs, then roll in cornflakes. Place on baking sheet and bake in preheated oven 10 min. or until balls are hot and crusty.
