Sausage, Cranberry and Apple Stuffing Recipe

1 lb - bulk sausage (use the sage flavored)
4 tbsp butter
3 cups of onion, chopped
2 Granny smith apples, cored and chipped
2 cups of celery - chopped
1 tbsp poultry seasoning
1 cup dried cranberries, rehydrated in boiling water for 15 minutes and drained
1 tbsp - chopped fresh sage leaves
2 tsp - chopped thyme
6 cups stuffing mix - cubed
1/3 cup chopped parsley leaves
2 to 3 cups of chicken stock
1 tbsp salt
2 tsp ground black pepper

Preheat Oven 375 degrees.
Saute the sausage in a large heavy skillet over medium-high heat until cooked through, crumbling coarsely with the back of a spoon. Using a slotted spoon, transfer the sausage and drippings to a a large bowl. Melt the butter in the same skillet over medium - high heat. Add the onions, celery to the skillet and saute for about 6 minutes. Add apples to the mixture and continue to saute for additional 4 - 5 minutes. Mix in the drained cranberries, poultry seasoning, sage, thyme.

Add the mixture to the sausage, then add in the croutons and parsley. Next add in the chicken stock a little at a time until the stuffing is very moist. It shouldn't be mushy. Season with salt and pepper.

Place in a sprayed casserole dish.

Bake for 20 to 30 minutes, until top is crispy and the center hot.

Not recommended for stuffing the turkey - makes the apples to mushy.
