1 cup dried white cannellini or great northern beans
3 cups of water
5 cloves of garlic, minced
1 large onion, chopped
2 stalks celery, thinly sliced
2 carrots, diced
1/4 tsp cayenne pepper (optional)
3/4 lb tomatoes, chopped (about 2 cups)
1 lb Swiss chard, coarsely chopped
1/2 cup dry red wine
1 tsp salt

Directions:
Directions:
Combine the beans and water in a pot. Bring to a boil, cook 2 minutes; remove from heat, cover, and let soak one hour or longer. Return to boil for 5 minutes, cover, and simmer gently for 20 minutes.

Meanwhile, in a separate 5 quart pot, combine the garlic, onion, celery and carrots. Cover and stew over moderate heat for about 10 minutes, until onions is translucent. Add cayenne and tomatoes. Cook over med-high heat, mashing with a spoon until the tomatoes start to soften. Add Swiss chard, stirring to wilt. When wilted, add wine, salt and partially cooked beans along with any liquid. Cover and simmer gently for about 45 minutes, or until beans are tender. Remove from heat and let sit 10 minutes before serving

Great vegetarian dish, very healthy with loads of veggies. If you like your food mild reduce or omit cayenne pepper.
