1/4 cup olive oil
8-10 large onions, chopped
1/4 cup parsley
3 quarts of water
Kosher Salt
1 tsp pepper
1-2 Tbsp sherry (optional)

Directions:
Heat olive oil in a large pot over low heat. Add onions and parsley. Cover and cook, stirring frequently, for 30 minutes until onions are golden brown. Add the water and raise the heat to medium. Cook covered, stirring frequently, for 30 minutes. Salt and pepper to taste

This is a great soup for nursing a cold. Onions are very tasty and great for healing. You can use vegetable or beef broth or a combination of broth and water to make up the 3 quarts of water.
