3 Medium Zucchini, Diced
3 Medium Summer Squash, Diced
2 Cloves Garlic, Minced
1 Small Onion, Chopped Fine (about 3/4 c.)
3 Ears of Fresh Corn (White Corn is Best)
1 Tomato, Diced (about 3/4 c.)
3 Fresh Poblano or Pasilla Chiles, Roasted, Peeled, and Chopped
1/4 tsp. Dried Oregano Leaves
3 tbsp. Butter
1/2 tsp. Salt
1/2 tsp. Pepper
1/2 c. Jack Cheese, Shredded

Directions:
Directions:
Cut corn from cobs. Saute corn in butter over medium heat. Add chiles, garlic, tomato, and onion. Cook until onion is transparent. Add squash and oregano. Season to taste with salt and pepper. Cover and cook over low heat until squash is tender, about 7-10 minutes. Uncover and cook 2 minutes to thicken. Add the cheese just before serving.
