chicken, cooked and deboned (save broth)
3 medium tomatoes, chopped
1/2 c. peanut butter (smooth or crunchy)
1 c. milk or soy drink

Directions:
Directions:
Cook and debone chicken; save broth. Make a “sofrito” by covering bottom of large skillet with oil and frying chopped onion and garlic. Add tomatoes. Cook together, stirring frequently. Add, peanut butter, milk and chicken broth. Add chunks of chicken. Cook until thick. Add salt to taste. Serve over white rice along with fried plantain or yucca.
